Colorful Fresh Spring Rolls


  • Rice paper
  • Rice vermicelli / Brown rice vermicelli
  • Peanut butter
  • Green / Yellow bell pepper
  • White beech mushroom
  • Romaine lettuce
  • Carrots
  • Cucumbers


  1. Boil carrots and cut into strips.
  2. Clean and cut cucumber, green bell pepper, yellow bell pepper into strips.
  3. Clean and boil white beech mushroom.
  4. Fry garlic and add peanut butter, then put some water. Stir until thickened and bubbly.
  5. Add in this order for easier wrapping: 1 leaf of romaine lettuce, vermicelli, carrots, cucumbers, green and yellow bell peppers, white beech mushroom.
  6. Fold the sides in. Then roll keeping everything contained until you've reached the end.
  7. Slice in half. Repeat process for remaining ingredients.
  8. Serve with peanut sauce.
